Ingredients

For the soup
  • 1 tbsp olive oil
  • 1 lb ground beef 85% lean
  • 1 yellow onion small, diced
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 can (28 oz) crushed tomatoes
  • 4 cups low-sodium beef broth
  • 2 cups water
  • 1 tsp Italian seasoning
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 8 oz lasagna noodles broken into 2-inch pieces
For the cheese topping
  • 1 cup ricotta cheese
  • 0.5 cup mozzarella cheese shredded
  • 0.25 cup Parmesan cheese grated

Equipment

  • 1 6-quart Dutch oven

Method

Brown the beef
  1. Heat the olive oil in a 6-quart Dutch oven or soup pot over medium-high heat, then add the ground beef and cook for 5 to 7 minutes, breaking it into small pieces, until browned and it reaches 160°F.
  2. Add the onion and cook for 3 minutes, stirring occasionally, then stir in the garlic and tomato paste and cook for 30 seconds.
Cook the soup
  1. Stir in the crushed tomatoes, beef broth, water, Italian seasoning, salt, and black pepper; bring to a boil over high heat.
  2. Add the broken lasagna noodles, reduce the heat to maintain a steady simmer, and cook uncovered for 10 to 12 minutes, stirring occasionally, until the noodles are tender.
Mix the topping
  1. While the soup simmers, stir the ricotta, mozzarella, and Parmesan together in a small bowl.
Serve the soup
  1. Ladle the soup into bowls and top each serving with a spoonful of the cheese mixture.

Notes

For the best texture, cook the noodles until just tender and serve soon after adding them. Refrigerate leftovers for 3 to 4 days; freezing is possible, though the noodles may soften. Ground turkey can replace the beef for a lighter option.
