Method
Cook the eggs
- Place the eggs in a 3-quart saucepan in a single layer.
- Add enough cold water to cover them by 1 inch.
- Bring the water to a full boil over high heat.
- Turn off the heat and cover the pan.
- Let the eggs sit for 12 minutes.
- Transfer the eggs to a large bowl of ice water with 2 cups ice and cool for 5 minutes.
- Peel the eggs and halve them lengthwise.
Make the filling and assemble
- Remove the yolks and mash them in a bowl with the mayonnaise, sour cream, horseradish, Dijon mustard, vinegar, salt, and pepper until smooth.
- Spoon the filling into the egg white halves.
- Garnish with the chives and paprika.
- Refrigerate for at least 20 minutes before serving.
Notes
Drain the horseradish well for a smooth filling. Store covered in the refrigerator for up to 2 days; freezing is not recommended. For a lighter filling, replace the sour cream with plain Greek yogurt.
