Ingredients

For the chicken and sauce
  • 1.5 lb chicken breasts boneless, skinless
  • 1.5 cup chicken broth low-sodium
  • 4 cloves garlic minced
  • 1 tsp Italian seasoning
  • 0.25 tsp black pepper
  • 1 block (8 oz) cream cheese softened and cut into cubes
  • 1 cup Parmesan cheese finely grated
  • 0.5 cup heavy cream
For the pasta
  • 4 qt water
  • 1 tbsp kosher salt
  • 12 oz fettuccine

Equipment

  • 1 6-quart slow cooker

Method

Cook the chicken and sauce
  1. Place the chicken in a 6-quart slow cooker.
  2. Add the broth, garlic, Italian seasoning, and black pepper.
  3. Cover and cook on LOW for 3 to 4 hours or HIGH for 2 to 3 hours, until the thickest piece of chicken reaches 165°F.
  4. Transfer the chicken to a cutting board and shred it with two forks.
  5. Add the cream cheese to the slow cooker, cover, and cook on HIGH for 10 to 15 minutes.
  6. Whisk the cream cheese into the hot cooking liquid until smooth.
  7. Stir in the Parmesan and heavy cream.
Cook the pasta
  1. Bring the water and kosher salt to a boil in a large pot.
  2. Add the fettuccine and cook according to package directions until al dente, usually 10 to 12 minutes.
  3. Drain the pasta.
  4. Return the shredded chicken to the slow cooker.
Combine and serve
  1. Add the pasta to the slow cooker and toss until coated in sauce.
  2. Cover and let stand for 5 minutes before serving.

Notes

For the smoothest sauce, whisk the cream cheese into the hot cooking liquid until no lumps remain. Refrigerate leftovers for 3 to 4 days; freezing is not recommended because the creamy sauce may separate. For a gluten-free option, use gluten-free fettuccine.
