Method
- Toss the beef with the flour, salt, and pepper until evenly coated.
- Heat the oil in a 6-quart Dutch oven over medium-high heat.
- Brown the beef in batches, turning to brown several sides, about 8 minutes per batch.
- Transfer the browned beef to a plate.
- Add the onion and celery to the pot and cook over medium heat, stirring occasionally, until softened, about 5 minutes.
- Stir in the garlic and tomato paste and cook for 1 minute.
- Pour in the stout and scrape up the browned bits from the bottom of the pot.
- Add the broth, Worcestershire sauce, thyme, and bay leaves.
- Return the beef and any accumulated juices to the pot.
- Bring to a simmer, cover, and cook over low heat for 1 hour and 15 minutes, maintaining a gentle simmer.
- Stir in the carrots and potatoes, cover, and simmer for 35 to 45 minutes, until the vegetables are tender and the beef is fork-tender.
- If the beef is still tough, continue cooking and check every 15 minutes.
- Remove the bay leaves.
- Let the stew rest off the heat for 10 minutes before serving.
Notes
For the most tender beef, keep the stew at a gentle simmer rather than letting it boil. Refrigerate leftovers for up to 4 days or freeze for up to 3 months. For a gluten-free version, use gluten-free flour, stout, and Worcestershire sauce.
