Make the cake
- Simmer the apple cider in a small saucepan over medium heat until reduced to 1/2 cup, about 15–20 minutes.
- Let the reduced cider cool completely.
- Preheat the oven to 350°F.
- Thoroughly coat a 10- to 12-cup Bundt pan with baking spray with flour.
- Whisk the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a medium bowl.
- Beat the softened butter and sugar in a large bowl until pale and fluffy, 3–4 minutes.
- Beat in the eggs one at a time, mixing well after each addition.
- Stir the applesauce, sour cream, vanilla, and cooled cider together in a medium bowl.
- Add the flour mixture and cider mixture to the butter mixture in three additions, beginning and ending with the flour mixture, and mix on low just until combined.
- Spread the batter evenly in the prepared pan and bake for 50–60 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Cool the cake in the pan for 15 minutes.
- Invert the cake onto a wire rack and let it cool until warm, about 20 minutes.
Coat the cake
- Melt the butter in a small bowl.
- Stir the sugar and cinnamon together in a shallow dish.
- Brush the warm cake all over with the melted butter.
- Sprinkle and gently press the cinnamon sugar over the surface.
Notes
For the best texture, let the reduced cider cool completely before mixing it into the batter. Store covered in the refrigerator for up to 5 days; freeze slices for up to 2 months. A 1:1 gluten-free baking flour can be used in place of the all-purpose flour.
