Ingredients

Prepare the apples
  • 6 apples medium baking, such as Honeycrisp or Granny Smith
  • 0.5 cup water
Make the crisp topping
  • 0.75 cup rolled oats old-fashioned
  • 0.33 cup all-purpose flour
  • 0.33 cup brown sugar packed, light
  • 0.5 tsp cinnamon ground
  • 0.25 tsp salt kosher
  • 4 tbsp unsalted butter cold, cut into small pieces

Equipment

  • 1 9x13-inch baking dish

Method

Prepare the apples
  1. Preheat the oven to 375°F.
  2. Core the apples from the top, making a cavity about 1 inch wide and leaving the bottoms intact.
  3. Set the apples upright in a 9x13-inch baking dish.
  4. Pour the water into the dish around the apples.
Make the crisp topping
  1. In a medium bowl, stir together the oats, flour, brown sugar, cinnamon, and salt.
  2. Work the butter into the oat mixture with your fingertips until coarse crumbs form.
  3. Divide the topping among the apple cavities, mounding it as needed.
Bake the apples
  1. Bake uncovered for 40 to 50 minutes, until the apples are tender when pierced with a knife and the topping is golden.
  2. Tent loosely with foil if the topping browns before the apples are tender.
  3. Let the apples rest for 10 minutes before serving.

Notes

For the best texture, leave the bottoms intact when coring so the filling stays inside. Refrigerate leftovers for up to 4 days; freezer storage is not recommended because the apples soften. For a gluten-free version, use certified gluten-free oats and a 1:1 gluten-free flour blend.
