Ingredients

  • 36 saltine crackers
  • 12 slices bacon regular-cut
  • 6 tbsp light brown sugar packed
  • 0.25 tsp cayenne pepper

Equipment

  • 1 18x13-inch rimmed baking sheet

Method

  1. Heat the oven to 250°F.
  2. Line an 18x13-inch rimmed baking sheet with foil.
  3. Set an oven-safe wire rack on top.
  4. Arrange the crackers in a single layer on the rack.
  5. Cut each bacon slice crosswise into thirds.
  6. Center one piece of bacon on each cracker.
  7. Stir the brown sugar and cayenne together in a small bowl.
  8. Sprinkle the mixture evenly over the bacon.
  9. Bake for 1 1/2 to 2 hours, until the bacon is browned and crisp and the sugar is melted.
  10. Let the crackers cool on the rack for 10 minutes before serving.

Notes

For an even topping, sprinkle the sugar mixture across the bacon rather than the exposed crackers. Store in the refrigerator for up to 3 days; freezing is not recommended. For a pork-free variation, turkey bacon can be used.
