Method
- Melt the unsalted butter in a 2-quart saucepan over medium heat, stirring often, for 5-8 minutes until it turns amber and smells nutty.
- Remove the butter from the heat and stir in the water.
- Pour the butter into a large heatproof bowl, scraping in the browned bits.
- Cool the butter for 15-20 minutes until warm but not hot.
- Whisk the light brown sugar and granulated sugar into the butter until combined.
- Whisk in the egg, egg yolk, and vanilla extract until smooth.
- In a medium bowl, whisk together the all-purpose flour, baking soda, and table salt.
- Stir the flour mixture into the butter mixture just until no dry flour remains.
- Fold in the chopped pecans and semisweet chocolate chips.
- Cover and refrigerate the dough for 1 hour.
- Heat the oven to 350°F.
- Line two 18x13-inch baking sheets with parchment paper.
- Scoop 2-tablespoon portions of dough onto the prepared sheets, spacing them about 2 inches apart.
- Bake one sheet at a time for 10-12 minutes, until the edges are golden and the centers look slightly underdone.
- Let the cookies rest on the baking sheet for 5 minutes.
- Transfer the cookies to a wire rack to cool.
Notes
For the best nutty flavor, scrape all the browned butter bits into the bowl and chill the dough for the full hour. Store cookies in an airtight container in the refrigerator for up to 4 days; freezer-friendly. For a gluten-free variation, use a 1:1 gluten-free baking flour in place of the all-purpose flour.
