Ingredients

  • 4 cups whole milk
  • 0.25 cup light brown sugar packed
  • 0.5 tsp ground cinnamon
  • 0.125 tsp kosher salt
  • 6 oz bittersweet chocolate finely chopped
  • 4 tbsp unsalted butter cut into pieces
  • 0.5 cup dark rum

Equipment

  • 1 3-quart saucepan

Method

  1. In a 3-quart saucepan, whisk together the milk, brown sugar, cinnamon, and salt.
  2. Heat over medium, stirring occasionally, until steaming and the sugar dissolves, 5 to 7 minutes, without letting it boil.
  3. Remove the pan from the heat and add the chocolate; whisk until melted and smooth, about 2 minutes.
  4. Whisk in the butter until incorporated.
  5. Stir in the rum and serve hot.

Notes

For the smoothest texture, keep the milk mixture from boiling. Refrigerate leftovers for up to 3 days; freezing is not recommended. For a dairy-free variation, use oat milk, dairy-free chocolate, and vegan butter.
