Ingredients

For the salmon
  • 4 salmon 6-ounce skin-on fillets (about 1 1/2 pounds)
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 1 tbsp olive oil
For the creamy dill sauce
  • 1 tbsp unsalted butter
  • 1 shallot small, finely chopped (about 1/4 cup)
  • 2 cloves garlic minced
  • 0.5 cup low-sodium chicken broth
  • 0.75 cup heavy cream
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 2 tbsp fresh dill chopped

Equipment

  • 1 12-inch skillet

Method

Cook the salmon
  1. Pat the salmon dry and season both sides with the salt and pepper.
  2. Heat the olive oil in a 12-inch skillet over medium-high heat.
  3. Place the salmon skin-side down and cook for 4-6 minutes, until the skin releases easily.
  4. Flip the salmon and cook for 2-4 minutes, until the thickest part reaches 145°F.
  5. Transfer the salmon to a plate and loosely tent with foil while you make the sauce.
Make the creamy dill sauce
  1. Reduce the heat to medium and melt the butter in the skillet.
  2. Add the shallot and cook for 2-3 minutes, until softened.
  3. Stir in the garlic and cook for 30 seconds.
  4. Pour in the chicken broth, scraping up any browned bits, and simmer for 1 minute.
  5. Stir in the heavy cream and Dijon mustard and simmer gently for 3-5 minutes, until slightly thickened.
  6. Stir in the lemon juice and dill.
  7. Spoon the sauce over the salmon and serve.

Notes

For the best texture, cook the salmon just until the thickest part reaches 145°F. Refrigerate leftovers for up to 3 days; freezing is not recommended because the cream sauce may separate. For a dairy-free variation, use dairy-free butter and unsweetened coconut cream.
