Method
Sear the salmon
- Pat the salmon dry and season both sides with the salt and pepper.
- Heat the olive oil in a 12-inch skillet over medium-high heat.
- Sear the salmon for 2–3 minutes per side until golden.
- Transfer the salmon to a plate.
Make the sauce and finish
- Reduce the heat to medium and melt the butter in the skillet.
- Add the garlic and cook for about 30 seconds, stirring, until fragrant.
- Pour in the chicken broth and scrape up any browned bits.
- Simmer for 2 minutes.
- Stir in the heavy cream.
- Simmer for 2–3 minutes until lightly thickened.
- Stir in the lemon juice and parsley.
- Return the salmon to the skillet and simmer gently for 2–4 minutes, spooning sauce over the fillets, until the thickest part of each reaches 145°F.
Notes
For a silky sauce, scrape up all the browned bits from the skillet. Refrigerate leftovers for up to 3 days; freezing is not recommended because the cream sauce may separate. Use vegetable broth instead of chicken broth for a vegetarian-friendly sauce, though the dish itself contains salmon.
