Ingredients

For the whipped cream
  • 0.5 cup heavy cream cold
  • 1 tbsp powdered sugar
  • 0.25 tsp vanilla extract
For the frozen hot chocolate
  • 1.5 cups whole milk divided
  • 4 oz semisweet chocolate finely chopped
  • 2 tbsp granulated sugar
  • 1 tbsp unsweetened cocoa powder
  • 0.125 tsp kosher salt
  • 3 cups ice

Equipment

  • 1 hand mixer
  • 1 blender

Method

Whip the cream
  1. In a medium bowl, beat the heavy cream, powdered sugar, and vanilla with a hand mixer until soft peaks form.
  2. Refrigerate the whipped cream.
Make the chocolate base
  1. Heat 1/2 cup of the milk in a small saucepan over medium-low heat until steaming, then remove from the heat.
  2. Whisk in the chocolate, granulated sugar, cocoa powder, and salt until smooth.
  3. Transfer the chocolate mixture to a shallow bowl and refrigerate for 30 to 45 minutes, until completely cold.
Blend and serve
  1. Add the cold chocolate mixture, the remaining 1 cup milk, and the ice to a blender; blend for 30 to 60 seconds, until smooth and slushy.
  2. Divide between two glasses and top with the whipped cream.

Notes

For the smoothest drink, make sure the chocolate mixture is completely cold before blending. Store covered in the refrigerator for up to 1 day; the slushy texture is best right away. Freezer: no, because it can become icy and lose its smooth texture. For a dairy-free swap, use dairy-free cream, milk, and semisweet chocolate.
