Make the crust
- Whisk the flour and salt in a medium bowl, then cut in the shortening with a pastry blender or fork until the mixture has coarse, pea-size pieces.
- Stir in 4 tablespoons ice water until the dough begins to hold together, adding up to 1 more tablespoon as needed; shape into a disk, wrap, and refrigerate for 20 minutes.
- Roll the dough between two sheets of parchment into a 12-inch circle, peel off the top sheet, and fit the dough into an ungreased 9-inch pie plate, pressing any cracks together.
- Preheat the oven to 375°F, line the crust with parchment, and fill with pie weights or dried beans.
- Bake for 15 minutes, remove the parchment and weights, then bake for 5 minutes more; cool the crust in the pie plate for 10 minutes.
Make the filling
- Whisk the pumpkin, sugar, cinnamon, ginger, nutmeg, cloves, eggs, coconut milk, and vanilla in a large bowl until smooth.
Assemble and bake
- Pour the filling into the crust and cover the crust edge with foil.
- Bake at 425°F for 15 minutes, then reduce the oven to 350°F and bake for 35 to 45 minutes, removing the foil for the final 15 minutes; the edges should be set, the center should jiggle slightly, and the center should reach 160°F.
- Cool the pie completely on a wire rack, about 3 hours, before slicing.
Notes
For a flaky crust, keep the shortening chilled and add only enough ice water for the dough to hold together. Refrigerate leftovers covered for 3 to 4 days; the pie can be frozen. For an egg-free variation, use a commercial egg replacer formulated for baking, though the filling may set more softly.
