Ingredients

  • 1 lb ground beef 85% lean
  • 1 package (16 oz) Velveeta cut into 1/2-inch cubes
  • 1 can (10 oz) Ro*Tel diced tomatoes and green chilies undrained
  • 8 drops green liquid food coloring

Equipment

  • 1 12-inch skillet

Method

  1. Cook the ground beef in a 12-inch skillet over medium heat for 7–9 minutes, breaking it into small crumbles, until browned and it reaches 160°F.
  2. Drain excess fat.
  3. Add the Velveeta and Ro*Tel to the skillet and cook over medium-low heat for 5–8 minutes, stirring often, until the cheese is fully melted.
  4. Stir in the green food coloring and cooked beef.
  5. Cook for 1–2 minutes, stirring, until the dip is evenly colored and hot throughout.
  6. Serve warm.

Notes

Drain the beef well to keep the dip from becoming greasy. Refrigerate leftovers for 3–4 days; freezing is not recommended because the cheese may become grainy. For a leaner option, use 93% lean ground beef.
