Ingredients

For the brownies
  • 0.5 cup unsalted butter
  • 1 cup granulated sugar
  • 2 eggs large
  • 1 tsp vanilla extract
  • 0.5 cup all-purpose flour
  • 0.33 cup unsweetened cocoa powder
  • 0.5 cup hot cocoa mix
  • 0.5 tsp salt
  • 0.5 cup semisweet chocolate chips
For the topping
  • 2 cups marshmallows mini

Equipment

  • 1 8-inch square metal baking pan
  • 1 microwave

Method

Make the brownies
  1. Heat the oven to 350°F.
  2. Lightly grease an 8-inch square metal baking pan and line it with parchment paper, leaving an overhang on two sides.
  3. Melt the butter in a large microwave-safe bowl in 20-second intervals, stirring between intervals.
  4. Whisk the sugar into the warm butter.
  5. Whisk in the eggs one at a time and the vanilla until smooth.
  6. In a medium bowl, whisk together the flour, cocoa powder, hot cocoa mix, and salt.
  7. Fold the dry ingredients into the butter mixture just until no dry streaks remain.
  8. Fold in the chocolate chips.
  9. Spread the batter evenly in the pan.
  10. Bake for 24 to 28 minutes, until the edges are set and a toothpick inserted in the center comes out with a few moist crumbs.
Add the marshmallow topping
  1. Scatter the marshmallows evenly over the brownies.
  2. Bake for 2 to 4 minutes, until puffed.
  3. Cool completely in the pan on a wire rack.
  4. Lift out using the parchment and cut into squares.

Notes

For clean squares, cool the brownies completely before cutting. Store covered in the refrigerator for up to 5 days; they can be frozen. For a dairy-free variation, use dairy-free butter, chocolate chips, hot cocoa mix, and marshmallows.
