Ingredients

  • 1 tbsp olive oil
  • 1 yellow onion medium, diced
  • 3 carrots medium, sliced
  • 3 celery ribs sliced
  • 3 cloves garlic minced
  • 1 tsp dried thyme
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 8 cups low-sodium chicken broth
  • 4 cups water
  • 2 lb chicken thighs bone-in, skin-on
  • 1 bay leaf
  • 8 oz wide egg noodles
  • 0.25 cup fresh parsley chopped
  • 1 tbsp lemon juice

Equipment

  • 1 6-quart Dutch oven

Method

  1. Heat the olive oil in a 6-quart Dutch oven over medium heat.
  2. Add the onion, carrots, and celery and cook for 6–8 minutes, stirring occasionally, until beginning to soften.
  3. Stir in the garlic, thyme, salt, and pepper and cook for 30 seconds, until fragrant.
  4. Add the broth, water, chicken thighs, and bay leaf; bring to a boil, then reduce the heat and simmer uncovered for 25–35 minutes, until the chicken reaches 165°F and the vegetables are tender.
  5. Transfer the chicken to a plate and let it rest for 5 minutes, then discard the skin and bones and shred the meat.
  6. Bring the broth back to a simmer and add the egg noodles.
  7. Cook the noodles according to the package directions, usually 6–8 minutes, until tender.
  8. Return the shredded chicken to the pot and stir in the parsley and lemon juice; simmer for 1–2 minutes, until the chicken is hot.

Notes

For the most flavorful broth, simmer the chicken until it reaches 165°F and the vegetables are tender. Refrigerate leftovers for 3–4 days; this soup can be frozen, though the noodles may soften when reheated. For a gluten-free option, use gluten-free egg noodles.
