Ingredients

  • 2 lb carrots peeled and cut into 2-inch-long sticks
  • 2 tbsp unsalted butter melted
  • 2 tbsp brown sugar packed
  • 0.5 tsp kosher salt
  • 0.25 tsp ground black pepper

Equipment

  • 1 18x13-inch rimmed baking sheet

Method

  1. Preheat the oven to 425°F.
  2. Toss the carrots with the melted butter, brown sugar, salt, and pepper until evenly coated.
  3. Spread the carrots in a single layer on an 18x13-inch rimmed baking sheet.
  4. Roast for 25 to 30 minutes, turning them halfway through, until tender and browned at the edges.

Notes

For even browning, spread the carrots in a single layer and turn them halfway through roasting. Refrigerate leftovers in an airtight container for up to 4 days; freezing is not recommended because the carrots may soften. For a dairy-free option, replace the butter with the same amount of olive oil.
