Ingredients

For the spiced cider
  • 1.5 cups apple cider
  • 1 cinnamon stick
  • 3 whole cloves
For the cocktails
  • 3 tbsp fresh lemon juice
  • 1 apple medium, thinly sliced
  • 1 bottle (750 ml) Prosecco chilled

Method

Make the spiced cider
  1. Combine the apple cider, cinnamon stick, and cloves in a small saucepan and bring to a gentle simmer over medium heat.
  2. Simmer for 5 minutes.
  3. Remove the pan from the heat, cover, and steep for 10 minutes.
  4. Strain out the spices and refrigerate the cider until cold, at least 1 hour.
Assemble the cocktails
  1. Divide the lemon juice and apple slices among 6 champagne flutes.
  2. Add 1 1/2 ounces of the chilled spiced cider to each glass.
  3. Pour the chilled Prosecco evenly among the glasses and serve immediately.

Notes

For the clearest, freshest flavor, make sure the spiced cider is fully cold before assembling. Refrigerate leftover spiced cider for up to 3 days; assembled cocktails do not keep well and are not suitable for freezing. For a nonalcoholic swap, replace the Prosecco with sparkling apple cider.
