Buckeyes

Buckeyes are creamy peanut butter balls dipped in smooth semisweet chocolate, with a small circle of peanut butter left visible at the top. Refrigerating the centers before dipping helps them stay firm as the chocolate coating sets.

Ingredients

Peanut butter centers
  • 1.5 cup peanut butter creamy
  • 0.5 cup butter unsalted, softened
  • 1 tsp vanilla extract
  • 0.25 tsp salt
  • 3.5 cup powdered sugar
Chocolate coating
  • 12 oz chocolate chips semisweet
  • 1 tbsp vegetable shortening

Equipment

  • 1 baking sheet
  • 1 microwave

Method

Make the peanut butter centers
  1. In a large bowl, beat the peanut butter, butter, vanilla, and salt until smooth.
  2. Beat in the powdered sugar a little at a time until a stiff dough forms.
  3. Roll the dough into 1-inch balls and place them on a parchment-lined baking sheet.
  4. Refrigerate the balls for 30 minutes, until firm.
Make the chocolate coating
  1. Combine the chocolate chips and shortening in a microwave-safe bowl.
  2. Microwave in 20-second intervals, stirring between each, until smooth.
  3. Insert a toothpick into each chilled ball and dip it into the melted chocolate, leaving a small circle of peanut butter visible at the top.
  4. Return each dipped ball to the baking sheet and remove the toothpick.
  5. Refrigerate the buckeyes for 20 to 30 minutes, until the chocolate is set.

Notes

For neat dipping, keep the peanut butter centers chilled and leave a small circle visible at the top. Store in an airtight container in the refrigerator for up to 2 weeks, or freeze for up to 3 months. For a dairy-free swap, use dairy-free butter and chocolate chips.
