Ingredients

  • 6 bacon slices
  • 1.5 lb butternut squash peeled, seeded, and cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 lb fresh green beans trimmed

Equipment

  • 2 18x13-inch rimmed baking sheets
  • 1 12-inch skillet

Method

  1. Heat the oven to 425°F with racks in the upper and lower thirds.
  2. Line two 18x13-inch rimmed baking sheets with parchment paper.
  3. Cook the bacon in a 12-inch skillet over medium heat for 8 to 10 minutes, turning as needed, until crisp.
  4. Transfer the bacon to a paper towel-lined plate, then crumble when cool.
  5. Toss the squash with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
  6. Spread the squash in a single layer across the baking sheets.
  7. Roast the squash for 18 minutes, switching the pans’ rack positions halfway through.
  8. Toss the green beans with the remaining 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
  9. Divide the green beans between the baking sheets and toss with the squash.
  10. Roast for 12 to 15 minutes, switching the pans’ rack positions halfway through, until the squash is fork-tender and the beans are tender with browned spots.
  11. Sprinkle the crumbled bacon over the vegetables and toss to combine.

Notes

For the best browning, spread the vegetables in a single layer without crowding the baking sheets. Refrigerate leftovers for 3 to 4 days; freezing is not recommended because the vegetables can become soft. For a vegetarian variation, use plant-based bacon.
